A well balanced and sharpe knife right out of the package. I find myself picking this knife up first more and more. It keeps a sharpe edge much longer than some of the more expensive knives I have and feels just right in my hand. Another KitchenAid product well made. The price was right also.

With this KitchenAid Professional Vegetable Cleaver you can complete many kitchen tasks. This all purpose knife can slice and dice vegetables while it also crushes garlic and whole spices and helps remove cut foods from your cutting board. The handle is made from Dupont Delrin and has a comfortable grip with a fully contoured handle, which is easy on the hand with rounded soft blade back. The blade is made from a high-carbon. Also available in red.This elegantly shaped vegetable cleaver comes from KitchenAid's Cook's Series line of cutlery. The handle, which comes in black or red, is fully contoured for comfort and made of high-impact-resistant Dupont Delrin. The blade is made from high-carbon stainless-steel, hand-ground to a razor-sharp edge, while the back is rounded to increase comfort when pressure is put on from above. A brushed stainless-steel end cap adds to the elegance and balance of this full-tang, perfectly weighted knife
